A cheese created, tended and cosseted by the expert hands of Mario and Egidio Fiandino: from the selection of the milk - 100% Piedmontese, naturally - to the processing and salting. After making the cheese, Mario and Egidio take great care of it, with regular checks throughout the maturing period, and sample it themselves before serving it to their customers.
